Pumpkin Super Bread

Did the word super get your attention? I hope so! This is a super bread because it has two super foods as ingredients. If you’ve made or looked at my banana bread recipes, you’ve noticed the oats! I like putting oats in my breads because they’re are a super food and they add texture. Oats are also a super food because of their soluble fiber, which is going to become like a gum in the GI tract, really moving everything out and helping to lower ‘bad’ cholesterol! Pumpkin, our favorite fall friend, is an excellent source of (again) fiber and vitamin A. You might be familiar with carrots being a good source it vitamin A, and for the same reason, so is pumpkin! It has to do with the chemical compound, beta-carotene, that give the two their orange color. Beta-carotene is converted to vitamin A in the body. It’s amazing what our body does for us!  Vitamin A is good for keeping up our night vision, keeping bones strong, and lately is being researched for it’s cancer fighting ability. Vitamin A-mazing. Also, the white chocolate chips are optional! I’m really liking their combo with pumpkin this season!

Pumpkin Super Bread

Ingredients

  • 2 tbsp. melted butter
  • 1 egg
  • 1/2 cup sugar
  • 1 3/4 cups pumpkin puree
  • 1/4 cup buttermilk
  • 1/2 cup oats
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1/2 tsp. ground cloves
  • 2 tsp. cinnamon
  • 2/3 cup white chocolate chips- more or less to your preference!

Instructions

  1. Preheat oven to 325 F.
  2. Mix together butter, egg, and sugar until mixed thoroughly.
  3. Mix in the pumpkin.
  4. Mix in the buttermilk.
  5. Combine the dry ingredients-oats, flour, baking soda, baking powder, salt, cloves, ginger, and cinnamon in a large bowl and gently blend together.
  6. Add the dry ingredients to the wet and mix until just combined.
  7. Fold in the chips.
  8. Bake for about 50 minutes. This one takes a little longer because the pumpkin is so moist.
