Peanut Butter is my LIFE!
This quick bread recipe looks a lot like the other banana bread recipe, but I was out of and running low of a few ingredients, so it’s a little different. I think I like the texture of this bread better so everything does happen for a reason!
1/2 c. sugar
2 tbsp. melted butter
1/2 c. buttermilk- buy it or mix 1 tbsp. lemon juice in 1c. milk
1 tsp. vanilla
2 ripe bananas
1/4 c. peanut butter- creamy or crunchy!
1 1/2 c. wheat flour
1/2 c. oats
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/4 c. chocolate chips
Preheat oven to 325 F and grease a loaf pan.
In a large mixing bowl, cream together melted butter, sugar, and egg.
Add the bananas slowly in pieces.
Add buttermilk and vanilla.
Add peanut butter and mix thoroughly.
In another large mixing bowl, add all dry ingredients and mix.
Add the wet ingredients to the dry and mix until just combined. Careful. Do not beat up that gluten.
Gently mix in chocolate chips.
Spread evenly in the loaf pan and bake for 50 minutes or until a toothpick comes out clean!
