2 ripe bananas
2 tbsp. melted butter
1/2 c. sugar
1/2 tsp. vanilla extract
1/2 cup buttermilk
1 & 1/2 c. whole wheat flour
1/2 c. oats
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
Cream together melted butter, sugar, and the egg.
Add the bananas in small pieces, or mash them up yourself and add.
Add Greek yogurt and vanilla and make sure everything is thoroughly mixed before stopping.
Combine all dry ingredients in a large bowl and gently mix.
Add the wet ingredients to the dry and stir until just combined. Don’t overbeat that gluten!
Spread evenly in greased loaf pan and bake for 50 minutes or until a toothpick comes out clean
My baking times will probably always be lower because our ancient oven runs warm but it’s better to check something too early than burnt!
