Mexican Meatloaf

Mexican is something I can eat all of the time. I need to be in the right mood for Chinese or Italian, but not Mexican. It includes so many nutrient dense foods that I love! Rice, beans, avocado, and so many veggies! So I bring you Part II in the meatloaf series . . .



1 lb  Ground Beef

1 packet of taco seasoning OR make it yourself. I LOVE this recipe-

1/2 c. Mexican cheese

1 cup of cooked black beans

1 cup of cooked brown rice

1 egg

1/2 jar of your favorite salsa


Preheat oven to 350 F

Grease a loaf of baking pan.

In a large mixing bowl, combine ground beef, taco seasoning, and egg. If using the recipe, I only use about 3/4 of it. It’s better to just use your hands.

IMG_2122Add the beans and rice, and make sure everything is mixed together. If there are beans and rice just not mixing in the meat mixture, that’s fine enough will have mixed in.

Form into a loaf shape in the pan.

Pour salsa over loaf and top with cheese.

Bake for 45 minutes or until internal temperature of loaf is 160 F.
