Chicken Parmesan Loaf

I love meatloaf! This recipe starts off my collection of different types of meatloaf! Enjoy!


2 lbs. ground chicken

2 eggs

1 c Italian panko bread crumbs

2/3 c parmesan cheese

2 cloves of minced garlic

1 tsp. basil leaves

1 tsp. pepper

1 tsp. garlic salt

1 jar of spaghetti sauce

Mozzarella cheese to sprinkle


Preheat oven to 350 F.

Generously grease a loaf pan.

Gently whisk the eggs together with the parmesan cheese.

Combine egg/ cheese mixture with all remaining ingredients except the mozzarella cheese and spaghetti sauce in a large bowl and mix thoroughly so everything is combined. It’s best to use your hands!

Place half of the meat mixture in the loaf pan. Be sure to spread thin.

Cover with half of the spaghetti sauce.

Add the remaining meat mixture to the pan and cover with the rest of the spaghetti sauce.

Sprinkle with mozzarella cheese until covered to your liking.

Bake for 1 hour or internal temperature is 160 F
