WIAW and Getting into Vacation Mode

It’s June 1st! When I was little, this date had two purposes: my parents anniversary, which I honestly wasn’t too concerned about, and it was pool opening day! This is no more as my parents no longer have their pool and I don’t live there anyway!

Today this date still means my parents anniversary, ( Happy 37 years!) and I’m getting married this month! IMG_2852

We completed Pre-Cana, I’ve got a dress, and he has the rings so we are all set! There are just a few million things that I need to do between now and June 24th.

I have not been blogging this past semester because making time to do so, I would have pushed away something else and I didn’t feel the need to do that. I knew I would have all summer to blog and I’ll have so much more to say while I’m in the Coordinated Program 🙂 I also got all As this semester, so what I did was just fine!

To ease back into it, I’m doing to share my What I ate Wednesday, or WIAW.

I’m happy to say that I have been able to maintain a normal eating schedule. A part of me was worried that I might think it would be a great idea to eat very clean and light with that wedding fast approaching. I know that changing your patterns of eating is never a long term change or solution. Not necessary!

I love breakfast. I have made that very clear, I think. Peanut butter oats with banana and honey is a staple that saves me a few minutes opposed to making eggs. I had to adjust to these new dishes because our old ones would absorb most the heat from the microwave so we would have to microwave food much longer. When we first started using them, our food would come out on fire!


Coffee. x2.Not pictured is the delicious watermelon that I ate at work for a morning snack. It’s starting to get a little too saturated so I’m thinking of making a watermelon salsa because we are having shrimp tacos tomorrow! I also had some almonds.


My love for avocado English muffins keeps evolving. I was just eating it mashed on my English muffin with my eggs. Then I started adding more and more to the mash, and finally put my eggs on my avocado muffins.

I have been adding lemon juice, garlic salt, minced garlic, and old bay seasoning to the mash. I also try to let the yolk in the egg get a little hard, or else they become really messy! Tortillas on the side, S’Mores Oreos for dessert. I’m always thankful when Matt buys the things I never would!


I had to go back to work, and then I had physical therapy. My hamstring is on the mend! My PT reminded me again that it would heal much faster if I scaled back running. I don’t quite understand what he was saying.

When I finally did get home, I had some full-fat Greek yogurt with blueberries and strawberries. These strawberries were massive! I cut up three and they took over the yogurt and blueberries.


While enjoying my yogurt, I was upstairs talking with Matt. Oh so slowly I found myself laying down and then before I knew it, I had a companion. One hour later, we woke up.


Matt went into work tonight so on my own for dinner, I ate leftover chicken and kale soup that I had made on Monday. I know it’s past soup season, but I was inspired by something I had had at Zoup, and everything in this soup is just so good for you! This is the first soup recipe that I’ve played around with that isn’t too watery. I’m so pleased! Check back for the recipe.


I hope that you are all renewed from the long weekend and the pleasant and hopefully permanent change in the weather! I’ll be busy finished up this wedding business, but I’m embracing all the excitement and joy that comes with it. It’s good to be blogging again!
