Or Berry Breakfast Parfaits any other month of the year!
Huzzah! We are in the home stretch for Christmas! This month has gone so fast and that is why I fully support decorating for Christmas and listening to Christmas music (a little bit) before the Thanksgiving because the season goes so fast and it’s over before you know it.
I fully intend on relaxing and enjoying these last leading days up until Christmas. Not exchanging gifts with anyone because of the wedding has been a load off of my shoulders for the obvious reasons that I’m saving time and money, but I’m so looking forward to this remaining time by being present and enjoying the season. We go away and see our families for Christmas so it’s usually a matter of making sure we have everyone covered gift wise and that we have everything before we go, but this year we can just get in the car and go!
I’m taking a peppermint blondie trifle to my parents so look for that soon!
To kick off my first weekend of winter break, I went to bed at 7:30pm on Friday night because I had gotten a cold 😦 I’m just thankful that it held off until school was finished! Saturday I was feeling much better and I spent the evening with one of my favorite people after diving back in to wedding planning that morning! Stephanie and I had dinner and a few drinks and spent time laughing and catching up. So nice and mentally refreshing. Because I wanted to get to Mass this morning, I knew I would most likely not have time to make pancakes, my guest breakfast staple, so I made parfaits!
These parfaits are a good way to start your day because they are filling and a good source of protein but because I mixed graham cracker crumbs in with the oatmeal, they almost a little bit desserty 😉 These parfaits do not take long to make (if you already have your oatmeal made), but you could definitely make a bunch a head of time and grab one in the morning throughout the week. Enjoy!
Merry Berry Breakfast Parfaits
Yields two parfaits
- 1 cup cooked oatmeal
- 1/2 cup blueberries
- 1/2 strawberries, diced (Or whatever your favorite fruit is!)
- 1 cup vanilla Greek yogurt
- 1/2 cup smashed graham crackers
- Smash up graham crackers (I used the milling option on my nutribullet, but smashing them in a large baggie will work too!) and mix in with the warm oatmeal
- Put about a fourth of this mixture in the bottom of the jar or glass to create your first layer.
- Add 1/4 cup of the yogurt to make the second layer
- Top with fruit
- Repeat all layers one more time
