Dinnertime- August 13th, 2015

I don’t know how my four months off from school has turned into about two and half weeks. Time is going so fast so in these remaining summer days, I’m going to squeeze in as much normal/ leisure/summery activities that I can before it’s back to a stricter routine. Even with this summer off, Matt and I don’t get to have dinner together as much as we would like because of his 12 hour third shift schedule. Luck was on our side tonight and we had the whole evening.

IMG_1776Sometimes when we have both had enough of the day, we choose Popeye’s fried chicken out of simplicity, and it’s usually the right decision. It’s not only delicious, but venturing into the bowels of Akron gives us a chance to do some people watching. However, Stuffed Zucchini was on the menu tonight. Zucchini is my favorite veggie in season a the moment so I found this recipe and later decided to tweak it a little out of convenience.

I substituted the sausage for ground chicken and it mixed very well with all the other ingredients! It almost had a chicken parmesan taste. I honestly decided to do this because someone was in my way at the grocery store and picking up the ground chicken seemed like a better decision than interacting with people in the moment. I’m glad I did it because later I was thinking of the fat content in chicken vs. sausage. Chicken is the health winner at two grams of fat per ounce and sausage has eight grams. Both will make delicious stuffed zucchini and both are a good source of protein, but it’s good to be aware of possible substitutions for healthier recipes. Also, I was pleasantly surprised that a pound of ground chicken was only $2.99. Wedding preparations are causing me a little thriftier lately.

Just to be fair, I made this with my dad’s homemade pasta sauce and it’s DElicious. You will not be able to find a duplicate in the store.
